Citrus - Cucumber Salad with Poppy Seed Dressing
I love summer tomatoes. But in winter and spring, I prefer citrus to give color and tang to my salads. In-season fruits and vegetables always taste better (and usually have more vitamins) than out-of-season produce that has either been shipped thousands of miles, or stored in a warehouse for weeks or even months. |

Salad:

Remove peel and white pith from citrus, then cut between membranes to take out sections. Peel cucumber. Cut in half lengthwise and scoop out seeds. Slice thinly. Toss citrus, cucumber and radishes. Pile on top of lettuce on individual salad plates. Top with dressing just before serving. Serves 4-6.
Poppy Seed Dressing: Combine all ingredients; stir to blend. Use at room temperature. |
